Champagne is like wine, it is great with food and cheese. Many people do not think of Champagne as a drink to accompany food!!! Well, you may want to try it. It is delightful with food, also it is great with cheese. I recommend trying a French Rosé Champange with the Chaource cheese. The Chaource cheese is creamy and have a very elegant and fine taste which pairs very well with the Rosé Champagne.

it fits well, especially Champagnes with a powerful taste like Bollinger. And drinking a bottle of Salon without food is a shame!

Chaource is good with Champagne but I prefer with "blanc de blanc" (only chardonnay).
I think you forgot to explain that the chaource taste better when it became yellow (after 2 weeks).
Never Tried a strong 50% pinot noir 50% Chardonnay with a Saint Nectaire Fermier (AOC in the région of Cantal)?

This may sound crazy but have had champagne with Fish & Chips (me being typical English) for a dinner party a few weeks ago. Went down very well. Also suggest champagne and smoked salmon, that goes down a 'treat' as well.
