I am afraid the wine they served you wasn't exactely a "local" wine as the wine region Rueda is over 300km away from Bilbao. A local wine would have been from de Chakoli de Bizkaia appelation. These wines however tend to have a high acidity level and not everyone likes them.
The Rueda wines on the other hand are very aromatic wines. I don't know if you tried one made of the verdejo variety or a sauvignon blanc or an assemblage of the two but this region produces some fine white wines indeed.
Kind regards,
Philippe
