We are looking for an ambitious and dedicated sous chef (m/f/d) for the Bülow Palais Dresden who will work with our head chef to further develop the culinary vision of our establishment and play a key role in shaping daily kitchen operations.
In this role, you will work closely with the head chef and take on a key position in ensuring quality, reliability, and creativity in all culinary areas, with the Brasserie Caroussel Nouvelle at the heart of our gastronomic offering. You are expressly invited to contribute your own creative ideas and critically develop existing standards in close collaboration with the head chef.
Your role:
As sous chef, you are the chef's right-hand man and a key leader within the kitchen team. You support the operational management of the kitchen, ensure that day-to-day business runs smoothly, and actively contribute to the consistent implementation of high-quality culinary concepts.
You lead by example, motivate your team, and actively participate in the further development of menus, standards, and processes.
Main areas of responsibility:
Cuisine & Quality
- Support for the chef in ensuring and further developing the culinary standards of all outlets
- Ensuring consistently high quality, presentation, and taste of all dishes
- Active participation in menu development, tastings, and creative processes
- Assumption of overall operational responsibility during the absence of the head chef .
Leadership & Team Development
- Guidance, motivation, and further development of chefs, trainees, and kitchen assistants
- Helping to create a positive, professional, and performance-oriented kitchen culture
- Support with induction, training, and further development of team members
Operational excellence
- Shared responsibility for daily kitchen organization, including mise en place, service procedures, and staff scheduling
- Monitoring food costs, portion control, and efficient use of goods
- Ensuring compliance with all HACCP, hygiene, and safety standards
- Support with inventory management, orders, and supplier coordination
Cooperation
- Close coordination with the service team to ensure smooth interaction between the kitchen and service staff
- Function as an important sparring partner for head chef and F&B management

Your qualifications:
- Completed culinary training and several years of professional experience in a high-quality hotel or restaurant kitchen
- Experience as a senior chef de partie or sous chef
- In-depth knowledge of food cost control, kitchen organization, and HACCP
- Very good knowledge of German, knowledge of English an advantage
- High motivation for professional and personal development in the luxury segment
