We are looking for a passionate and forward-thinking Restaurant Manager to lead the launch of POCO , our new pizzeria and bar concept inspired by the creative energy of D4100 - the London based hospitality brand known for bringing people together through food, community and joyful experiences.

POCO will be a lively, modern space serving exceptional pizza in a social, inclusive atmosphere. Expect collaborations with guest chefs and bartenders, live music nights, DJ sessions at the bar, partnerships with local coffee roasters, and signature community events such as singles-only nights or community dining experiences. POCO is designed to be a place where Vienna meets, mingles, shares, discovers and always feels welcome at the table.

You will bring this dynamic concept to life by championing POCO's welcoming, social atmosphere and embodying Miiro's thoughtfully personal approach to hospitality. We look forward to your authenticity, leadership, and operational finesse as you cultivate a service culture that blends warm, intuitive hosting with the contemporary, community-driven spirit of D4100. With Miiro Spittelberg opening soon, you will play a pivotal role in shaping a guest experience that truly reflects both brands-vibrant, genuine, and deeply connected to the neighbourhood.

As our Restaurant Manager we want you to:

  • Lead the full pre-opening setup of poco in collaboration with the Cluster Food & Beverage manager, ensuring a seamless launch for the pizzeria and bar, aligned with Miiro standards and the social dining spirit of D4100.
  • Build operational structures, service rituals, menu flows and guest-engagement moments that reflect poco's vibrant character.
  • Manage budgets, forecasting, cost control and financial performance with accuracy and ownership. Ensure accurate reporting.
  • Oversee all ordering and inventory for food, beverages, uniforms, tableware and operational supplies - guaranteeing smooth daily operations.
  • Maintain stock controls with daily/weekly/monthly checks and a focus on reducing waste and optimising productivity.
  • Lead and motivate from the front, setting the example: Shape a team culture that reflects POCO's warm, welcoming, community-driven identity - confident, relaxed, and full of personality.
  • Direct day-to-day staffing needs, scheduling and labour planning; set performance goals and guide development for the team.
  • Recruit, train and inspire Miiro Hosts to deliver service that feels genuine, heartfelt, and effortlessly fun. Ensure that POCO is a wonderful place to work, managing and supporting staff well-being and development in a culture that embodies Miiro values, building morale, team spirit, accountability and professionalism. Regular and consistent communication is key!
  • Ensure compliance with all legal, safety and operational standards; provide ongoing training and knowledge so the team can thrive.
  • Nurture and maintain a strong relationship with our community. Regularly engage with our customers, our neighbours, and our online audience like they are your long lost cousin, creating memorable moments and ensuring expectations are exceeded.
  • Collaborate with Marketing and Events teams to activate POCO through live music nights, DJ sets, pop-ups, community dinners, guest-chef collabs or neighbourhood partnerships.
  • Support cross-department coordination with Kitchen, Meetings & Events, Bar and Front Office to ensure a seamless guest experience.
  • Embrace the fast-paced, ever-changing nature of hospitality with positivity, openness and curiosity.
What we are looking for

  • Strong knowledge of pizza culture, beverages, natural wines, or modern casual dining concepts.
  • Several years' experience required.
  • Experience in breakfast operations, ideally within hotels or high-volume venues.
  • A "local insider" mindset: excited to connect poco with Vienna's culinary, creative and cultural scene.
  • A calm, solutions-oriented approach, even in the busiest service moments.
  • Outgoing host personality. Social media presence and experience managing content preferred.
  • A hands-on leader who coaches by example and builds a supportive team environment.
  • Flexible, adaptable and energised by launching a new concept.
  • Fluent in German and English.

We offer a competitive salary aligned with your experience and qualifications. The legal basis for this role is the collective bargaining agreement for the hotel industry in the state of Vienna, which stipulates a minimum monthly salary of €2,699.
