I verify ingredient and supplier specifications against menus, resolving allergen gaps before service, lead food-safety communication across teams, particularly at FOH, and support audit preparation with the site EHS Officer.

Maintained allergen compliance and traceability across more than one hundred European artisan cheeses, ensuring declarations, cross-contamination controls, and labelling met EU retail requirements. Applied dairy science from my postgraduate training, including milk composition and fermentation microbiology, translating complex ingredient-risk information into guidance a non-specialist audience could act on.

Developed an original probabilistic allergen risk model aligned with Codex and EFSA frameworks, running 100,000 Monte Carlo iterations in @RISK to rank risk across thirteen allergen groups. Characterised twenty-six allergenic proteins, identifying control points for HACCP-aligned allergen management directly applicable to ingredient risk tiering and formulation decisions.

Across two nationally commissioned, multi-stakeholder nutrition research projects (one with the National Nutrition Council and one with Ajinomoto Philippines Corporation), including a four-arm randomised study of 360 mother-child pairs across seven communities and two community kitchens over 120 feeding days.
