In Canada, different kinds of food use linseed in the composition. This seed has cyanogenic compounds which can be carcinogenic. The goal of this study was to develop a new method that reduces these compounds during the production process of food like pasta and muffins. The method was developed successfully using hydrolyzes during and production process and the results were measured using gas chromatography analysis for cyanogenic compounds. This method was my completion of course work at the University.
