Joined this new independent restaurant group before their opening, with views to a rapid expansion. I was in control of all aspects of the business.

Worked with and maintained movie theater software applications, troubleshooted and manually operated projectors and sound systems. Organised and run private events and hires, including themed parties with both internal and external catering and personalised menus. Determined movie selection, liaising with film programming team and distributors and developed creative ways to increase attendance. Forecasted sales by average ticket price, SPH, audience and times.

Moved to retail as GM Level 3 (highest) where I learnt all aspects of retail and over the counter service, as well as running a commercial kitchen. 95% satisfaction for mystery shopper survey and Health and Safety audits for all four quarters

Generated sales 12.4% over budget YTD, 19.5% more than FY 14/15 and improved EBITDA from -21.1% to -4%. Over 200 positions up on Trip Advisor since taking over, mystery diner average 90%. Employee turnover down by 26%. Initiated strategic local business marketing, maximised profits through effective cost control, staff scheduling, inventory management, and ordering. Improved customer service by developing and motivating the team.
