Sicherstellung der Qualität der Fertigung entsprechend den Zielvorgaben, Hygiene/HACCP Vorschriften betreffend den Anlagen und der Produktherstellung. Führen von Teams in der Produktion, Zusammenarbeit mit Prossesingener, Fachprozesingener, Produktionsmitarbeiter, AV, QS, QM, Entwicklung, Instandhaltung. Verantwortung für den Betrieb der Anlagen, Freigaben bei Produktionsstart, ordnungsgemäßes Buchen der Produktionaufträge, Unterweisen von Mitarbeitern, Vorbereitung und Rüsten von Arbeitplätzen.

My responsibilities were mostly in the technical part of rosé production, operating plant machinery, controlling the different steps specific for the development of rosé wine, wine tasting and adaptation of the process parameters during production.

I was involved in all day-to-day operations of the winery. Cellar responsibilities: grape maturity testing, crushing, ferment management, yeast inoculation, additions, pressing and barrel work. Laboratory responsibilities: routine chemical analyses of juice and wine (tracking sugar levels, acidity, pH, etc.).

Range of responsibilities in the winemaking process: punch downs, pump overs, pressing of fermentations, additions to fermentations, driving the fork-lift, saignee operations, cleaning tanks, sampling fermentations for the lab, sulphuring wine in barrels, topping wine in barrels, filling barrels with wine and general duties including cleaning, etc
